PHILOSOPHY
The philosophy of the Istanbul Food Workshop
is to share knowledge and experiences of food, cooking (and
sometimes nutrition) with those who want to learn.
About taste
At the workshop we firmly believe that increased appreciation
of taste enhances the enjoyment of food. Sensory evaluation
of the components as well as the sum can heighten the value
of food and drink for a learned palate. To facilitate this
seasonal produce, full of flavor, colour and optimal nutrition
will be highlighted in each programme.
About the alchemy
of food
Understanding the behaviour of food during preparation and
cooking can also add a layer of complexity to one's experience
with food. At the workshop we will share our unique knowledge
with participants to further develop their own personal connections
with food.
And finally about nutrition
The sensory properties of food and drink have taken a back
seat in recent years to concerns about its nutritional properties.
Disregard for an essential element of a good diet, that of
enjoyment of food, has lead to drastic and often unnecessary
changes in cooking and eating habits. Good nutrition is about
being aware of what you are eating, knowing what changes can
be made while still enjoying the eating experience. The workshop
will aim to facilitate learning about nutrition within the
framework of building and enhancing positive relationships
with food and drink.
